‘‘‘Gerbstoffe‘‘‘ sind die Chemikalien, mit denen der Gerber den Zerfall der Kollagenfasern des Leders durch Anbindung der Gerbstoffe verhindert. Die Häute würden sonst verwesen. Zur Gerbung werden die unterschiedlichsten Gerbstoffe verwenden. Am weitesten verbreitet sind die Pflanzengerbstoffe, Chrom III und synthetische Gerbstoffe. Das fertige Leder besteht zu 8 bis 45% aus Gerbstoffen.
